All the ingredients for Amish Chicken Dressing Casserole are easy to prep and assemble and even easier to throw together!

Use a large saucepan for this over medium heat. Most Amish cooks would use a cast-iron skillet or pot. If you don't have chicken broth, cream of chicken soup would be a decent substitute. And if you don't have celery, you can get some of the same flavor with cream of celery soup. Cream of mushroom soup adds good flavor too but also sodium.

This is where you add chicken and other seasonings or spices that you might like but that the recipe doesn't call for, like rosemary thyme. Stir in some sour cream here if you want added richness.

We love to buy rotisserie chicken and use the meat from it. Or just throw in any leftover chicken you may have, this recipe is great for using leftovers. Otherwse just buy some precooked chicken breast and chop into bite-sized pieces.

Put in the oven in a glass baking dish. Use some cooking spray on it for easier clean-up. Some people like to sprinkle shredded cheese on top before sticking in the oven but I think it tastes fine without it.

This is a delicious meal. I think adding some corn or peas to the mix of veggies would be a great addition. Store leftovers in an airtight container in the fridge for up to a week or freezer for a month. Stick in the microwave to thaw, This is the best stuffing casserole recipe I have found!

  • ½ cup finely chopped onion
  • ½ cup finely chopped celery
  • ½ cup finely chopped carrots
  • 1 cup diced potatoes
  • ½ cup butter
  • 2 cups chicken broth
  • 1 large loaf dried bread, cubed
  • 1 teaspoon salt ⅛ teaspoon pepper
  • 1 cup milk
  • 2 cups finely chopped chicken

  1. In a large saucepan, melt oleo.
  2. Add chicken broth and chopped vegetables and bring to a boil.
  3. Reduce heat and simmer until vegetables are tender.
  4. Combine vegetable mixture with remaining ingredients and mix well.
  5. Add more broth if necessary.
  6. Pour into greased baking dish and bake 35-45 minutes at 350 degrees

    I love this recipe! And I love the use of the word Oleo~just the word my Mom used on her recipe cards and a word she still uses to this day!
