Why this Shortbread Recipe is the BEST

There are a few reasons why this shortbread recipe is the best. The fact that it only requires 5 ingredients is pretty awesome.

Thisclassicshortbread recipe is made withbrown sugar which is certainly magical. The flavor that brown sugar gives to this cookie is slightly different from granulated sugar. This easy cookie recipealso bake up perfectly crisp! They are perfect with a warm cup of coffee or a glass of milk.

If you prefer a regular chocolate chip cookie, this Thick Chocolate Chip Cookie recipe or these Mini chocolate Chip Cookies would both be great!

What goes into this Recipe

  • Butter: When you only have 5 ingredients, every single element has to shine and real butter is a must. A good salted butter is what I prefer but if you would rather use unsalted butter, go for it. Grade AA is the very best, followed by A and then B…I say…go for the good stuff.
  • Brown Sugar: It is a matter of preference on whether you decide to use dark or light brown sugar in this recipe. I have used both and loved both.
  • Flour: All purposeflour is what is going to give the shortbread structure.
  • Salt: Adding salt helps to balance these cookies perfectly. You could also add a sprinkle of flaky sea salt after baking for a deeper saltiness.
  • Mini Semi-Sweet Chocolate Chips: Mini sweet chocolate morsels work great in this recipe but if you prefer to use dark chocolate chunks that would also be wonderful. If you prefer plain shortbread cookies then omit the chips altogether.

Dipping Chocolate Chip Shortbread in Chocolate

While totally optional, dipping his easy chocolate chip shortbread recipe in chocolate can take them to the next level. The best part is that it is so simple to do but makes a huge impact.

Once the cookies are cooled, melt chocolate wafers in the microwave until smooth {it will take about 1 minute}.

Take one cookie at a time and dip half into the melted chocolate. Pull the cookie out of the chocolate and allow the excess chocolate to drip off so that you don’t get too much chocolate. Then place the cookie onto a parchment lined baking tray to set up.

Tips for making Shortbread

  • Use a good quality butter for the perfect shortbread. It is important that it is real butter.
  • Don’t add any liquid to the cookie dough. The dough is supposed to be a bit dry in the beginning. Keep working the dough with your mixer {and/or your hands} until it comes together.
  • Don’t skip chilling the dough. This simple step is super important to get a good shortbread with a crispy texture.
  • Remember that shortbread cookies won’t spread. This allows you to put the chocolate chip cookies closer together on the baking sheet.
  • Don’t pull the cookies from the oven too soon. Shortbread is supposed to be perfectly crisp, so allow the oven to do its job.
  • Cool the cookies completely on the baking sheet. This will also help the cookies to crisp up and get the wonderful buttery shortbread.

Storage and Freezing

Freeze- This chocolate chip shortbread cookie recipe will freeze well for up to 3 months.

Recipe FAQs

Do I need a mixer to make this cookie recipe?

You really do need a mixer of some kind in order to get the dough to come together.

Shortbread dough takes a bit of time to mix once the flour is added and so a mixer works great for that. This Salted Caramel Butter Bar recipe also uses a mixer.

Do I have to add chocolate chips?

No, these Shortbread Cookies are awesome without. Using brown sugar in the shortbread makes all of the difference and gives you a wonderful cookie with or without the chocolate chips.

Can I use regular sized chocolate chips?

I don’t recommend it. The reason why is because we are cutting these cookies out and regular sized chocolate chips would make this step more difficult.

Can I use other shaped cookie cutters?

You can use other shaped cookie cutters as long as they aren’t too intricate. The cookie cutter needs to be simple in order to get a clean cut.

What are common mistakes when making shortbread? ›

The most common mistakes when making shortbread are over-working the dough, and incorporating too much flour. The less you work the dough, the more crumbly and melt-in-your-mouth your shortbread cookies will be.

What is the difference between shortbread cookies and regular cookies? ›

They're both delicious cookies, but different. Sugar cookies are lighter, while shortbread is dense. Shortbread is more rustic, while sugar cookies work best for cutting and decorating. Sugar cookies will have a leavening (baking powder or soda) while shortbread has a short and simple ingredient list.

What's the difference between butter biscuits and shortbread cookies? ›

Shortbread cookies, butter cookies, and sugar cookies are all light in color and buttery, but there are a few key differences: Eggs: Butter cookies and sugar cookies typically contain eggs, while shortbread cookies can be made with or without eggs. The egg makes the dough more pliable and less crumbly.

What is the difference between Scottish shortbread and regular shortbread? ›

Traditional Scottish shortbread is a simple recipe made with sugar, butter, flour, and salt. Other shortbread styles will include leavening agents like baking powder and baking soda, which makes them crisp instead of crumbly like traditional Scottish shortbread.

Should butter be cold for shortbread? ›

Should butter be cold or room temperature for making shortbread? Always start with cold butter straight from the refrigerator. This will keep the dough from warming up, making it greasy and difficult to roll out.

Should you chill shortbread dough before baking? ›

Step 3: The Secret to the Absolute Best Shortbread

After shaping the cookies, don't rush to the oven! Instead, chill the dough in the refrigerator for 30 minutes or so (overnight is OK, too).

What happens if you don't poke holes in shortbread? ›

Piercing the shortbread with a fork is not only for decoration, but it's meant for more even baking. Poking holes in the shortbread allows the heat to penetrate the cookie, hence more even baking. Notice I'm using powdered sugar here. You'll see lots of shortbread recipes using granulated sugar.

What happens if you add too much butter to shortbread cookies? ›

Butter is an emulsifier and it makes cookies tender. It also adds in the crispy-around-the-edges element. Adding too much butter can cause the cookies to be flat and greasy. Adding too little butter can cause the cookies to be tough and crumbly.

What do Americans call shortbread? ›

Americans are the outlier on how we use "biscuit"

To most of the rest of the English-speaking world, a biscuit is what Americans would refer to as either a cookie or a cracker. Biscuits can be sweet (shortbread) or savory.

Why use unsalted butter in shortbread? ›

Use unsalted butter for balanced flavour. Unsalted butter was traditionally used in baking because it was a superior product to salted - salt is used as a preservative so unsalted butter was thought to be fresher.

Why do my shortbread cookies taste like flour? ›

Over-measuring flour: If you use too much flour in your cookie dough, it can result in a dry, floury taste. Make sure you measure your flour correctly by using a kitchen scale or by spooning the flour into a measuring cup and leveling it off with a knife.

Is butter or margarine better for shortbread? ›

Shortbread relies on really good-quality unsalted butter for its flavour, so don't skimp on this and never use margarine!

What is a substitute for butter in shortbread cookies? ›

Try 3/4 cup olive or vegetable oil for every 1 cup of butter called for. Vegetable oil won't change the flavor very much, while olive oil will bring an earthier flavor.

Why are shortbread cookies so good? ›

Shortbread is called short because of the traditional ratio of one part sugar to two parts butter that lends a high fat content to the dough. This yields a soft, buttery crumb that melts in your mouth, similar to short crust pastry. This ratio is also what makes shortbread so crave-worthy.

Should shortbread cookies be soft or hard? ›

Shortbread should always have a tender, melting texture, but be slightly crisp when you bite into it. It should not generally be damp or wet underneath. A classic shortbread recipe will also only have flour, butter and sugar as the ingredients (in a 3:2:1 ratio) and not egg, which could lead to excess moisture.

Why do you put cornstarch in shortbread cookies? ›

Cornstarch provides the shortbread with structure, but its biggest job is keeping the cookies extra soft, tender, and light. I love adding a small amount to chocolate chip cookies too. Optional Coarse Sugar Topping: For an optional sparkly crunch on your shortbread wedges, add a sprinkle of coarse sugar before baking.

Why did my shortbread cookies come out hard? ›

These proportions make shortbread a lot more dense compared to cookies, which means you could easily end up with shortbread that's hard and crunchy rather than buttery and crumbly. Per Cooktop Cove, this can occur when the dough has either been overworked or not chilled for long enough.
