Ingredients:
- 4 eggs
- 1 cup of sugar
- 1 cup of all-purpose flour
- 1 teaspoon of baking powder
- 1/4 teaspoon of salt
- 1 teaspoon of vanilla extract
- 1/4 cup of milk
Instructions:
Preheat your oven to 350°F (175°C) and grease a round cake pan. Separate egg whites and yolks into two different bowls. Beat the yolks lightly until they become pale and slightly thickened. In another bowl, whisk the egg whites until stiff peaks form. Gradually add sugar to the beaten yolks, continuing to whisk until the mixture is creamy and well combined. Sift together the flour, baking powder, and salt. Fold this into the yolk and sugar mixture. Add vanilla extract to the milk and then gently fold this into the batter. Carefully fold in the whisked egg whites, ensuring you keep as much air in the mixture as possible. Pour the batter into the prepared cake pan and smooth the top with a spatula. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean. Remove it from the oven and let it cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely. Once cooled, you can serve the sponge cake as is or use it as a base for various desserts, such as adding whipped cream, fresh fruit, or a drizzle of chocolate sauce.
