Italian Twisted Fried Chicken burger

The ultimate fried chicken burger recipe!

There are a lot of “Best fried chicken recipes out there”, many try to imitate the famous KFC secret recipe.

This Italian twisted recipe is my secret and it’s so, so delish, and I’m sharing it with you!

You simply cannot beat the freshness of homemade fried chicken. This is quite simple to make and despite its simplicity in ingredients. It’s spicy, crispy and juicy.

I’ll be bold enough to claim that it’s the best recipe you will ever find.

With the smokiness of the paprika, the spicy popcorn like crunchy coating and the brined moist meat, you will be amazed at the outcome using a standard fryer.

I’ve made this using boneless, skinless chicken thighs but you can certainly make it with chicken breast, ideally skin on.

The ciabatta bread is toasted in olive oil, coated with garlic mayonnaise, that alone is incredible!
Serve this fried chicken with a salad, a few fries on the side and a nice glass of wine! No co*ke! Make it quick before this becomes the next secret fried chicken recipe!

Ingredients

  • For the chicken
  • Vegetable oil, for frying
  • 4 chicken thighs or chicken breasts - No bones
  • 2 tsp onion powder
  • 1 tsp Garlic powder
  • 1 tbsp smoked paprika
  • ½ tsp white pepper
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 tsp brown sugar
  • 1 tbsp dried oregano
  • 1 cup buttermilk
  • 2 egg whites (use yolks for mayo if making your own)
  • 1 bay leaf
  • 1 cup all-purpose flour
  • ¾ cup cornflour
  • For the garnishes and sauces
  • ½ cup of mayonnaise (see my recipe)
  • 4 tbsp pesto
  • 1 x ciabatta loaf or 4 burger buns
  • A few crispy lettuce leaves. (iceberg is best)
  • Pickles of your choice, go for a little kick!
  • 2-3 Fresh tomatoes

Steps

  • Step 1

    For your spice mix, in a mixing bowl add onion powder, garlic powder, white pepper, salt, and brown sugar. Mix well.

  • Step 2

    Trim any fat from your chicken pieces. On your chicken pieces, sprinkle a generous amount of dried oregano on each side. Then approx. 2 teaspoons of the spice mix and coat each side evenly. Keep the rest of the spice mix for later. Flatten the thick parts of your chicken, lightly pound using a meat mallet or underside of a saucepan until an even size. This will help it cook evenly.

  • Step 3

    In a marinating container or mixing bowl, add the butter milk, bay leaf, half tsp of salt and 1 bay leaf, mix well. Place the spice coated chicken to the butter milk, cover, refrigerate and marinate overnight or a minimum of 2 hours.

  • Step 4

    Place the mayonnaise in a small mixing bowl (see my recipe), add one minced garlic clove, white wine vinegar, chopped parsley, set aside.

  • Step 5

    The following day or 2 hours later, remove the chicken from the fridge 30 minutes before use. Heat up your deep-frying oil to a temperature of 340°F – 170°C (be careful not to overfill in case of fire)

    While the oil is heating, add your leftover spice mix to a mixing bowl along with the all-purpose flour, corn starch (corn flour) and baking powder, mix well.

  • Step 6

    Whisk the two egg whites just so they froth a little. Remove the chicken pieces from the butter milk and dip in egg whites first then coat in spicy flour mix one at a time. Repeat process until each piece has been coated in flour mix.

  • Step 7

    Place the chicken in the hot oil 2 or 3 pieces at a time until golden brown, approx. 3-4 minutes. Try and maintain a constant 340°F – 170°C temperature. Once cooked, Remove and place over a wire rack for the fat to drip. Serve immediately.

  • Step 8

    For the ciabatta bread, place a pan on high heat with a little olive oil, toast inside of bread in oil until brown.
    Coat the bread with mayonnaise, spread evenly on all pieces.

  • Step 9

    For the assembly, place the bottom piece on serving plate and line with pickles. Add a fried chicken piece, two tomato slices topped with pesto. Some crunchy iceberg lettuce and the top of the bread. Enjoy my Italian twisted fried chicken burgers, I know you will!!!
